I LOVE fajitas. I will literally never turn down a sizzling skillet of peppers, meat, and onions. Fajitas are among my top five favorite foods, so when I discovered today was National Fajita Day I had to celebrate.

There are plenty of great places to get an order of fajitas in Tuscaloosa, but these are my three favorite fajita dishes in the Druid City.

1. Fajita Gumbo at Jalapeño's Mexican Grill
Fajita Gumbo S L A P S. I remember seeing this on the menu at Jalapeño's and being reluctant to try it, but I was so, so wrong. Fajita Gumbo is like heaven in a bowl.... it's cheesy and full of steak, chicken, shrimp, and cheese. I could eat it every day.

2. Fajitas at Veracruz Mexican Grill
I don't know how they marinate the steak at Veracruz, but it is so dadgum tasty and tender that I can't stand it. Veracruz also has these weird daily specials where they'll slap fajita meat and cheese on top of other stuff like enchiladas or tostadas, and it brings me an indescribable amount of joy.

3. Chicken Fajita Taco at Whataburger
Y'all are sleeping on this little baby. It's cheap af and clocks in at less than 300 calories. The real trick is to add cheese. I get a slice of pepperjack on mine. I am not lying when I say there was a three month period of my life during which I had a chicken fajita taco literally every morning. PERFECTION.
